Padrón peppers are a small, green heirloom chili pepper originating from the municipality of Padrón in Galicia, northwestern Spain. Famous for their unpredictable heat, they are a staple Spanish tapas dish often described as "culinary Russian roulette" because while most are mild, roughly one in ten can be quite hot. They can be used raw in salads (sliced and seeded) or roasted in olive oil until the skin is lightly charred, sprinkle with sea salt and a splash of good olive oil and eat as a tapa dish.
