Fennel

Foeniculum vulgare


Fennel is a hardy, aromatic, perennial herb from the carrot family, recognized by its tall, hollow stems (up to 2.5m), feathery, bright-green leaves, and yellow, flat-topped flower umbels. It features a strong, aniseed or licorice scent and produces small, ridged seeds. All parts are edible, with cultivated types producing a white, crisp, celery-like bulb.
