Cabbage
Brassica oleracea - Capitata group
Cabbage is a leafy vegetable with a round, compact head or "heart" made up of many layers of thick, sturdy leaves that grow in a tightly packed formation. The outer leaves are usually a darker green, while the inner leaves are lighter in color. The leaves have a smooth, slightly waxy texture and have a neutral flavour with a satisfying crunch. When cooked they develop a smooth, buttery texture.
